About Me

My photo
I am a former career girl and am now a stay-at-home-mom to 2 amazing little girls. Exercise and "dieting" have never been easy for me. But now more than ever, I am determined to adhere to a more active, healthy lifestyle. I am not dieting - just making smarter, more natural food choices. I want to set a great example for my girls. I starting running last year with the Couch-to-5K running program. I've lost over 35 pounds since last year and I want to lose 60 more. I completed my first race (a 5K) in October and I running a 10K by this summer. My long-term goal is ultimately to run a half-marathon in 2012. I've created this blog to put it all out there and most of all - to keep me honest. I include a tested recipe & inspiring workout song on each post. I am also hoping to inspire and be inspired by you! I would love for you to join me for this journey and become an official follower of this blog!

Trying is Planning to Fail

I recently overheard someone say "Trying is planning to fail." Although I don't think this statement can be an absolute, I think it holds true in most instances.

So many times previously I've approached either diets or particularly exercise routines as... "well, i'll try it for awhile" and then if I didn't get the immediate results I was after, or if things became too hard .... that's when I would quit.

If you "try" something you are automatically giving yourself an out. This time around I am not trying to become a runner. I am going to become a runner. I know it's going to be extremely challenging given the extra pounds I have to carry around while running, but I am up for the task (even if it means I look stupid doing it and am not as fast as most). I mean if people on The Biggest Loser can run, so can I! I started week 2 of the program yesterday, which included longer running intervals and lived to tell the tale. Running isn't going to kill me! :)

Besides taking the word "try" out of my vocabulary, this time around I'm also not going to let the scale dictate my success or mood. I am going to base my success on three things. 1. Making smart food choices the large majority of the time. 2. Sticking to an exercise regime. 3. How I feel in my own skin.

Will I use a scale as a general guide... yes! Will I be excited as the numbers decrease.... yes! But if they don't decrease as quickly as I want them too - again I'm not going to beat myself up about it or deem myself unsuccessful (in the past that's when I would quit). I plan to weigh myself once a week and will share the results.

I also plan to share 2 things with you on every post.
1. A song that really motivated me while running.
2. A healthy recipe that I like (hopefully usually with a picture of what it looks like when I cook it)
If there is a particular song that motivates you, or there is a healthy recipe that you would like to share... please do so. You could post in a comment below.

THIS WEEK'S SONG: "That's Not My Name" by the Ting Tings (thanks randi!)

THIS WEEK'S RECIPE: Lemon Quinoa Salad and Wilted Spinach

I got this recipe from Cascadian Farm. I thought it was also good cold. You can find Quinoa at most stores now - I get it from Trader Joe's. It is a very healthy grain vs. brown rice etc. as it has more protein than most grains. Its also a good source of fiber and iron.

Lemon Quinoa Salad with Feta and Wilted Spinach

2 tablespoons extra virgin olive oil
2 cups fresh baby spinach
4 scallions, chopped
2 cloves garlic, minced
2 cups cooked quinoa
¼ cup feta cheese
Juice and zest from one Meyer lemon
Sea salt and black pepper to taste

Heat olive oil in a large skillet or wok. Add the spinach and scallions. Cook over medium heat until spinach begins to wilt. Add garlic, toss and cook for 30 seconds more. Add the cooked quinoa and continue to sauté until quinoa is heated through. Squeeze lemon juice evenly over the salad, add zest and feta. Stir to combine and immediately remove from heat. Salt and pepper to taste. Serve immediately.
Makes 2 meal-sized servings or 4 sides.

I didn't take a picture of the recipe. Hopefully I will have a picture for the next post! :)

  1. I started out at the beginning of the year about 60lbs overweight. I have lost 25 of what I want to lose. The C25K program is great! I started it in March and ran my first 5K on May 15th and finished with a time of 32 minutes 51 seconds. That beat my goal time of 35 minutes!

Good luck with the program...it really does work!!!

  2. I just did week 5, day 1... C25k is *such* a mental thing. I like the song suggestion! Today I used Kanye West's "Stronger" for one of my 5-minute intervals.

    Keep going, you're doing great!

  3. Great job Kelli - it sounds like everything is going well and your recipe sounds amazing! I just made these great quesadillas that took only 20(ish) minutes to make and they were amazingggg! And with only 364 calories, how can you not love them! Here's the recipe (for 2 servings):

    1/2 teaspoon honey
    1/4 teaspoon lime juice
    1/4 cup reduced-fat sour cream
    2 (8-inch) wheat tortillas
shredded Monterey Jack cheese with jalapeno peppers
1 cup chopped skinless boneless rotisserie chicken breast
1 cup thinly sliced peeled firm ripe peaches
    chopped cilantro

    1. Combine honey and lime juice in small bowl, stir well with a whisk. Stir sour cream into honey mixture; cover and chill until ready to serve.

    2. Place tortillas flat on a work surface. Sprinkle cheese over half of each tortilla; top each tortilla with 1/2 cup chicken, 1/2 cup peaches, and cilantro. Fold tortillas in half.

    3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Place 2 quesadillas in the pan, and top quesadillas with a cast-iron or other heavy skillet. Cook 1 1/2 minutes (we did longer) on each side or until tortillas are crisp and lightly browned (leave cast-iron skillet on quesadillas as they cook).

    4. Cut quesadillas and serve with sauce!

My mom and I also had refried beans (fat free!) and gazpacho (which is also SO easy!) on the side, and it was a great combination.

    Enjoy!

  4. Keep it up. I started the program at the end of May. I am about 75 pounds overweight and have struggled with my weight for most of my adult life. Certainly having 2 boys in 15 months didn't help. I decided that this was the year to take it off...not just for me, but for my family. I LOVE the C25K program. I could not have imagined just a short 2 months ago that I could run a consistent 25 minutes. However, that is where I am now. I completed W7D3 today and am so excited and pumped! You will have low points, but continue to remind yourself that this is the NEW YOU and look at your babies. You want to be here when they get older and you want to be around to play and participate in your grandbabies lives as well. I'm 33 years old and I AM A RUNNER! You are too. I have a blog that I periodically post my journey. The link is below. Thanks for the recipe as well! It sounds YUMMY! ~Mama Brown

  6. That recipe looks amazing! I have recently discovered quinoa and I really like it.

Congrats on changing your lifestyle! I started my fitness journey at the start of this year and never would have imagined that I would be a runner. I started C25K in May to train for a portion of a 30K relay at the end of June, which was a lot of fun! I also have a 10k race coming up in a couple of weeks!

I also want to encourage you to take your measurements and take some 'before' pictures. I have found these to be a tremendous inspiration and encouragement for me to keep going. Sometimes the scale isn't the best measure of success!
